Fugaise is Chef Don Saunders' creation. Saunders was classically trained at Le Cordon Bleu in London. Locally, he contributed to the success of Vincent and La Belle Vie before leading St. Paul newcomer A Rebours to "Best New Restaurant in 2004" (Mpls/St. Paul magazine).

Fugaise has received warm praise both locally and nationally from Zagats, Bon Appetit, Gourmet Magazine, and other food-focused publications. Chef Saunders is consistently applauded for his focus on the food and unwillingness to take shortcuts.
